Easy High-Protein Chicken Salad

This Easy High-Protein Chicken Salad is one of my favorite meal prep recipes because it's simple, packed with protein, and comes together with just a handful of ingredients. Enjoy it on sourdough toast, in a sandwich, with crackers, in lettuce wraps, or straight from the bowl!
Yield: 4 servings
Ingredients
1 pound boneless, skinless chicken breast (about 3 medium chicken breasts) or rotisserie chicken
½ red onion, finely diced- linked my favorite dicer that saves me so much time!
3 celery stalks, diced
⅓ cup plain Greek yogurt
2 tablespoons mayonnaise
2 teaspoons Dijon mustard
Juice of ½ lemon
1 tablespoon pickle juice
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
2 teaspoons chopped green onion
1 tablespoon fresh dill, chopped
2 tablespoons dried cranberries
Instructions
Preheat your oven to 400°F.
Place the chicken breasts on a baking sheet and bake for 25–35 minutes, or until the internal temperature reaches 165°F.
Let the chicken cool for about 5 minutes.
While the chicken is cooling, combine the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, pickle juice, garlic powder, onion powder, salt, pepper, green onion, dill, diced celery, diced red onion, and dried cranberries in a large mixing bowl.
Shred the cooked chicken using a hand mixer (my favorite method!) or two forks.
Add the shredded chicken to the dressing and stir until everything is evenly coated.
Cover and refrigerate for at least 30 minutes before serving to allow the flavors to come together.
Storage
Store the chicken salad in an airtight container in the refrigerator for up to 4 days. Give it a quick stir before serving if any liquid separates. This recipe is perfect for meal prep and makes an easy lunch or snack throughout the week.
