Fluffy Oats Yogurt Bowl

If you've never tried scrambled oats before, this is your sign! They have the cozy flavor of oatmeal with a texture that's somewhere between oatmeal and scrambled eggs. They're quick, filling, and an easy way to start your day with over 30g of protein.
Ingredients
⅓ cup rolled oats (I recommend rolled oats over quick oats for the best texture.)
1 ripe banana, mashed (or substitute 2 tablespoons unsweetened applesauce—I’ve made it both ways and both are delicious!)
2 egg whites (or 1 whole egg, but I personally prefer using egg whites)
Splash of vanilla extract
Dash of cinnamon
¾ cup plain nonfat Greek yogurt, for serving
Directions
In a bowl, mash the banana until smooth.
Stir in the rolled oats, egg whites, vanilla extract, and cinnamon until well combined.
Heat a nonstick skillet over medium-low heat and lightly coat with cooking spray.
Pour the oat mixture into the skillet and cook, stirring frequently with a spatula, until the mixture becomes fluffy and resembles soft scrambled eggs, about 5–7 minutes.
Transfer to a bowl and top with the Greek yogurt. Add your favorite toppings like berries, nut butter, chopped nuts, or a drizzle of honey if desired.
