High-Protein Chicken, Edamame & Veggie Bowl

This is one of my favorite easy lunches when I want something high in protein but don’t feel like actually cooking a full meal. It’s basically a mix-and-match plate filled with protein, veggies, fruit, and lots of different textures. So simple, filling, and perfect for busy days!
Ingredients
4 oz Just Bare Lightly Breaded Chicken Breast Chunks- pro tip: air fry them for at least a few minutes longer if you like them extra crispy!
½ cup green peas- I buy them frozen and microwave them for about 30 sec- 1 minute with 1 tbsp of water
½ cup shelled edamame- I buy them frozen and microwave them for about 30 sec- 1 minute with 1 tbsp of water
½ cup coleslaw mix
Cucumber, sliced
Cherry tomatoes, halved
2 tbsp shredded carrots
½ clementine, peeled and separated into segments
Salt and pepper, to taste
Dressing: this is my favorite low calorie dressing i've been eating for years! If you have the time, feel free to make your own!
Instructions
Bake or airfry the chicken according to the package directions until hot and crispy.
Microwave the peas and edamame
Add the chicken, peas, edamame, sliced cucumber, tomatoes, shredded carrots, and clementine to a bowl or plate.
Season the veggies with a little salt and pepper and serve with your favorite dipping sauce or dressing, if desired.
That’s it! It’s an easy, colorful lunch with over 40 grams of protein and requires very little prep.
