This is one of my favorite balanced lunches or dinner when I want something that's quick, satisfying, and packed with protein. It's also perfect for leftovers. The seasoned ground beef pairs perfectly with creamy cottage cheese, avocado, and a few crunchy tortilla chips for the perfect combination of flavors and textures.
Ingredients (Serves 4)
Ground Beef
1 lb lean ground beef
2 tsp kosher salt
1 tsp black pepper
2 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp cumin
½–1 tsp chili powder (adjust to taste)
1 tbsp Worcestershire sauce
1 tbsp olive oil or butter (especially if using lean beef or bison)
For Each Bowl
¼ cup cottage cheese
A few avocado slices (about ¼ avocado)
A small handful of tortilla chips (about 8–10 chips)
Optional Toppings
Fresh salsa
Hot sauce
Cilantro
Lime wedges
Pickled onions
Jalapeños
Instructions
Heat the olive oil (or butter) in a skillet over medium heat.
Add the ground beef and cook until browned, breaking it up as it cooks.
Stir in the Worcestershire sauce and all of the seasonings. Continue cooking for another 2–3 minutes until the beef is fully cooked and well coated.
Divide the beef evenly between four bowls.
Add ¼ cup cottage cheese, a few slices of avocado, and a small handful of tortilla chips to each bowl.
Finish with any optional toppings and enjoy!
