High-Protein Peach Cobbler Yogurt Bowl

This easy high-protein peach cobbler is warm, sweet, and perfect spooned over creamy Greek yogurt. It comes together entirely on the stovetop and makes a great breakfast, snack, or healthy dessert.
Yield: 1 serving
Ingredients
1 ripe peach or nectarine, sliced
1 teaspoon butter
½ lemon, juiced
2 tablespoons rolled oats
2 tablespoons vanilla protein powder
½ tablespoon shredded or desiccated coconut
Dash of cinnamon
Dash of salt
Splash of vanilla extract
Drizzle of honey or maple syrup
Plain Greek yogurt, for serving
Instructions
Melt the butter in a small skillet over low to medium heat.
Add the sliced peach or nectarine to the skillet.
Drizzle the fruit with the vanilla extract, honey or maple syrup, and fresh lemon juice.
Stir and cook for about 4–6 minutes, or until the fruit begins to soften and release its juices.
While the fruit cooks, combine the rolled oats, protein powder, coconut, cinnamon, and salt in a small bowl.
Sprinkle the oat mixture evenly over the softened fruit.
Stir everything together and continue cooking over low heat for another 2–4 minutes, until the topping is warm and slightly softened. Add a tiny splash of water or milk if the mixture seems too dry.
Remove from the heat and spoon the warm peach cobbler mixture over a bowl of Greek yogurt.
Finish with an extra sprinkle of cinnamon or drizzle of honey, if desired.
