High-Protein Peanut Butter Rice Crispy Cups

These no-bake crispy cups are an easy sweet snack made with puffed rice cereal, peanut butter, Greek yogurt and vanilla protein powder. Perfect for keeping in the fridge when you want something sweet!
Makes: 9 cups
Ingredients
2 cups puffed rice cereal
½ cup creamy peanut butter
¼ cup honey or maple syrup
1 scoop vanilla protein powder
¼ cup plain Greek yogurt
½ tsp vanilla extract, optional
Pinch of salt
Optional: melted dark chocolate and flaky sea salt for topping
Directions
Add the peanut butter and honey or maple syrup to a large bowl and stir until smooth. If your peanut butter is thick, microwave the mixture for about 15–20 seconds to make it easier to mix.
Stir in the Greek yogurt and vanilla extract until combined.
Add the vanilla protein powder and mix until smooth.
Gently fold in the puffed rice cereal until evenly coated.
Divide the mixture between 9 silicone muffin cups, pressing each one down firmly so the cups hold together.
Refrigerate for at least 1–2 hours, or place in the freezer for about 30 minutes to set.
If desired, drizzle with melted dark chocolate and finish with a little flaky sea salt.
Storage
Store the crispy cups in an airtight container in the refrigerator. Because they're made with Greek yogurt, they should be kept refrigerated rather than stored at room temperature. Enjoy them chilled straight from the fridge!
