Honey Glazed Salmon Bowls & Peach Salsa

One of my favorite high-protein meals that's quick, flavorful, and perfect for meal prep 🤍 Even my toddlers love it!
Makes 4 Servings
Ingredients
1lb salmon, skin removed easy skin removal tip below!
2 tsp olive oil
2 tbsp honey
2 tsp onion powder
2 tsp garlic powder
1 tsp paprika
1 small lemon, juiced
Salt and pepper, to taste
Peach Salsa:
2 peaches, diced
1 mango, diced
1 lime, juiced
1 avocado, diced
â…“ cup red onion, diced
4 corn husks cooked, kernals sliced off or use ½ cup frozen corn kernals
1 tsp taco seasoning
salt & pepper
Chipotle Dressing:
1 cup greek yogurt
2 tbsp of hot sauce of choice
juice ½ of a lime
Salmon Instructions
1. Cut salmon into bite-sized cubes.
2. Add salmon and all ingredients to a large bowl.
3. Toss until evenly coated.
Air Fryer Method
1. Preheat air fryer to 400°F.
2. Arrange salmon in a single layer.
3. Air fry for 6–8 minutes until cooked through and lightly crisped.
4. Work in batches if needed.
Oven Method
1. Preheat oven to 425°F.
2. Arrange salmon on a parchment-lined baking sheet.
3. Bake for 10–12 minutes.
4. Broil for 1–2 minutes at the end for extra color and crispiness.
Salsa recipe:
combine all ingredients and mix together
Serve over rice or couscous, salmon and top with the peach salsa!
easy skin removal tip: put a piece of paper towel overtop the skin of the salmon (lay salmon with skin facing up) and pour boiling water over top the salmon + paper towel. Make sure the paper towel is fully wet. Let it sit about 2 minutes and the skin will peel right off!
