High Protein Greek Yogurt Waffles

These protein waffles are one of my favorite quick breakfasts when I want something filling that doesn't take much time. They're soft on the inside, crisp on the outside, and packed with protein to help keep you full all morning. I love topping mine with a dollop of Greek yogurt and fresh fruit for an easy, balanced breakfast.
Ingredients (Makes 1 Serving)
⅓ cup rolled oats (or oat flour)
⅓ cup plain Greek yogurt
½ scoop vanilla protein powder- linked my favorite here
1 large egg
¼ tsp baking powder
Splash of milk (about 2 tbsp)
Optional: Cinnamon and/or a splash of vanilla extract
Instructions
Preheat your waffle maker- linked mine here
Add the oats (or oat flour), Greek yogurt, protein powder, egg, baking powder, milk, and any optional cinnamon or vanilla to a blender.
Blend until smooth.
Let the batter rest for 2–3 minutes to thicken.
Pour the batter into the preheated waffle maker and cook until golden brown and crisp.
Top with a dollop of plain Greek yogurt and your favorite fruit, nut butter, or drizzle of honey.
